Jambalaya

Ingredients:
• 2 tbsp. butter or margarine
• 1 medium onion, chopped
• 1/3 cup green bell pepper, chopped
• 1/3 cup yellow bell pepper, chopped
• 1/3 cup red bell pepper, chopped
• 2 cloves garlic, minced
• 1 (1 lb.) pkg. Hillshire Farm® Chipotle Hot Cocktail Links, cut in halves
• 2 cups chicken broth
• 1 (14 1/2 oz.) can tomatoes, diced, drained
• 1 cup converted rice; 1 tbsp. Cajun seasoning
• hot sauce to taste
Directions:
Melt butter in heavy saucepan over high heat, add vegetables, and sauté for 5 minutes.
Add all other ingredients, mix well, and bring to a boil. Lower heat, cover, and simmer for 25 minutes until rice is cooked.
Remove from heat and allow to sit for 5 minutes before fluffing with fork. Add hot sauce to taste.
Yield:
4—6 servings
