Make-Ahead Cherry Juice

Ingredients:

1 ½ cups fresh or frozen pitted cherries (no syrup or sugar added)
1 cup water
1 tablespoon sugar

Directions:

Bring cherries, water and sugar to boil in a medium pot. Turn heat to low and allow to simmer for 10 minutes. Occasionally mash the cherries with the back of a spoon (or a potato masher) to release their juices. Pour into a fine mesh strainer over a container or bowl, pressing the cherry “pulp” with the back of a spoon until all the liquid is released.


Store in refrigerator up to 3 days, or freeze small portions in sealed plastic bags or containers.

Yield:

Makes about 1 cup of Cherry Juice. Double this recipe if you want to store more juice. This recipe also yields about ½ cup pulp leftover in the strainer. Save this pulp to add to cookies, muffins or smoothies.

wow this is good and not real sweet. started to make it and had to put the kids to bed so my husband finished making it, he did an awesome job, can't wait to serve the fun drinks when they get home from school today.

It will keep in an airtight container or plastic bag for at least 3 to 4 months. It adds great nutrition to muffins, cookies, smoothies, even hamburgers!

This cherry juice was amazing - thanks for the recipe. We made the juice and the Cherry Vanilla Martinis for a party and they were a hit. Quick question - I stored the leftover cherry pulp in an airtight container in the freezer - how long will it last?
