Cream Puffs with Pink Filling

Ingredients:
1 cup of water
1/2 cup butter
1 cup all purpose flour
4 eggs
filling:
1 package instant vanilla pudding
1 cup cold milk
2 cups whipped cream (make this using one envelope of Dream Whip whipped topping mix, following directions on the box)
3-4 tbsps of confectioners (powdered) sugar
red food coloring
optional: chocolate chips
Directions:
Heat butter and water in a saucepan to a rolling bowl, then stir in flour vigourously over low heat for 1 minute until mixture forms a ball, then remove from heat and beat in eggs all at once until smooth, drop by scant 1/4 cup onto ungreased cookie sheet
Bake at 400 degrees, 35-40 minutes until golden brown.
Cool and cut off the very top of each cream puff and squeeze in filling, place the cut off top back on top of the filled cream puff; sprinkle powdered sugar over the tops or you can melt chocolate chips, drizzle over the filled cream puffs then sprinkle the powdered sugar.
These should be refrigerated until about 15-20 minutes before party so the filling stays cool but not to cold.
Filling directions: add the package of instant vanilla pudding into the cold milk, mix until smooth, add a few drops of red food coloring to make pink; then fold in the whipped cream (made from the Dream Whip envelope and following the directions on the box)
I have found that once I make the filling its easiest to put it in a large plastic baggie and then I can just pipe the filling into each cream puff, I do the same with the melted chocolate and clean up is a snap!
These yummy treats are always a hit and they are very simple to make!
Yield:
about a dozen or so, depends on how big you choose to make them
