Black Eyed Pea Salad

Ingredients:
- 3 cups canned or cooked black eyed peas (rinsed and drained)
- ¼ tsp salt
- ½ cup finely chopped onion
- ½ cup finely chopped celery
- 1 red bell pepper, seeded and finely chopped
- ¼ cup cider vinegar
- 3 TBS chopped fresh basil (or 1 TBS dried basil)
- 2 to 3 garlic cloves
- 1 ½ tsp sugar
- freshly ground pepper
- salt
- 1 cup olive oil
Directions:
In a serving bowl, combine peas, onion, celery and bell pepper. In small bowl whisk together vinegar, basil garlic sugar and pepper and salt. Slowly whisk in (or add in a blender) cup of olive oil. Combine with peas and veggies: refrigerate; allow to marinate and chill at least 2 hours.
