Apple Raisin Muffins

Ingredients:

2 cups flour

1/3 cup brown sugar

1 t baking powder

1/2 t baking soda

1/2 t cinnamon

1/4 t nutmeg

1/2 t salt

3/4 cup buttermilk

1/2 cup unsweetened applesauce

2 large egg whites

2 T oil

1 cup chopped and peeled apple

1/3 cup raisins

Directions:

Heat oven to 400 degrees. Spray 12 muffin cups with cooking spray.

Stir together flour, brown sugar, baking powder, baking soda, cinnamon and salt in large bowl. Make well in center.

Stir together buttermilk, applesauce, egg whites and oil in small bowl. Pour buttermilk mixture into well of dry ingredients. Stir until dry ingredients are moistened. Do not overmix. Gently fold in apple and raisins. Divide batter evenly among 12 muffin cups.

Bake for 25 minutes or until toothpick inserted in center of muffins comes out clean. Take out of pan and cool.

Yield:

12 muffins
