Lower Fat (and Easy!) Banana Bread

Ingredients:
6 very ripe bananas
1 1/4 cups sugar
2 cups flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
Directions:
Preheat oven to 350 degrees.
Mash bananas and mix well with the sugar.
In a separate bowl, combine the remaining dry ingredients (flour, baking soda, baking powder, salt).
Mix the dry ingredients into the banana and sugar mixture. Add vanilla and mix well.
Coat a loaf pan with non-fat baking spray and pour in batter.
Bake for 1 hour. Check periodically by inserting a toothpick. It should come out clean when inserted into the center of the bread.
