THE SNEAKY CHEF’S CHEERY HOT COCOA

Ingredients:
THE SNEAKY CHEF NOTE: Cherry, informally known as the “healing fruit,” not only significantly boosts the health benefits of this complete nutritional drink, it quietly enhances the rich taste of the dark chocolate. Cherries are rich in vitamins A, C, potassium, fiber, and add to the abundant antioxidants already present in the cocoa. This cherry hot cocoa really is cheery, since cocoa has been found to elevate moods and warm the spirit, especially by the fire on snowy winter days.
1 ½ cups fresh or frozen pitted cherries (no syrup or sugar added)
1 cup water
3 cups lowfat milk
3 packets Dark Chocolate Flavor NESTLÉ CARNATION INSTANT BREAKFAST Complete Nutritional Drink
Directions:
Bring cherries and water to boil in a medium pot. Turn heat to low and allow to simmer for 10 minutes. Occasionally mash the cherries with the back of a spoon (or a potato masher) to help release their juices. Pour into a fine mesh strainer over a container or bowl, pressing the cherry “pulp” with the back of a spoon until all the liquid is released (you can save this cherry pulp to add to homemade cookies, muffins, or smoothies).
While cherries are simmering, place milk in 1-quart microwave-safe container. Microwave on HIGH (100%) power for 4 minutes or until very hot (almost boiling). Stir in Carnation Instant Breakfast and strained cherry juice.
Yield:
4 1/3 cups

hey sneaky chef, when i made this, i noticed that the cherry flavor wasn't really strong, but i love cherries! if i wanted to push that flavor more, would you suggest i add more juice or maybe the cherry pulp to give it texture?

hi partyhardykb! I'm glad you like the cherry cocoa. I developed this recipe to actually hide the cherry flavor so kids especially wouldn't notice it (remember, I'm The Sneaky Chef!) If you want even more cherry flavor, just make the cherry juice with 2 cups of cherries, and if you want more texture, mix in some of the leftover cherry pulp. Enjoy!
