Chick Pea Pita Pockets

Ingredients:

Pita Pocket bread

1 can of Chickpeas, (garbonzo beans)
Mayo
Variety of favorite other ingredients or leftover veggies

Directions:

Toast a pita pocket in the toaster.

Combine one can of chick peas; well drained, with mayonnaise. You may use any combination of many other ingriedients according to your own preferences. It's good just plain but also good with these
suggestions:
mustard, spicy mustard, greek seasoning, onions, green onions, chopped leeks, garlic, lettuce, tomato, celery, relish, mixed greens.. and the list is endless!

This looks like a fun simple food for a holiday party. I would suggest a low-fat mayonnaise instead of regular mayonnaise to make it a little healthier.

Oops I meant for this to go into the lunch category with breakfast as an option.
