Quick Extra-creamy Chicken Alfredo

Ingredients:

1lb fettucine noodles

1/2 block (4oz) Philly 1/3 less fat cheese

1 (16oz) bag frozen mixed veggies

1 lb boneless skinless chicken breast

1/4 cup milk

Parmesan cheese

 

Directions:

Boil fettucine according to package directions, adding frozen veggies for last 8 minutes of cooking. Cook chicken over medium-high heat in 12 in. skillet sprayed with non-stick cooking spray for 4-6 minutes each side, until no longer pink inside. Remove chicken from skillet and cut into 1 inch pieces. Return to skillet and add cream cheese, milk, and parmesan cheese to taste. Drain noodles and vegetables and toss. More or less milk may be added to achieve desired consistency.
