Bean Dip
posted by RebeccaMohning
Ingredients:
HEALTHY TIP: Beans are full of protein and fiber, so bean dip should be a healthy treat. But most store-bought and restaurant versions sneak in lots of extra fat. This recipe uses fat-free beans and reduced fat cheese. It tastes better and has only 1g of fat per serving.
16 oz can of fat-free refried beans with green chilies
½ cup chunky salsa
8 oz reduced fat cheddar cheese, shredded
1 tablespoon dried parsley
Directions:
Spread beans over the bottom of a 7x11 inch baking dish that has been sprayed with cooking spray. Carefully dot the salsa over the beans. Sprinkle the cheese over the salsa and the parsley over the cheese. Microwave on 70% power for 3 minutes. Serve with baked tortilla chips.
